Ingredients

  • 3 lbs Yukon Gold potatoes, peeled and quartered
  • 1/4 cup WVOO Greek Lemon Olive Oil
  • 1/3 cup warm milk
  • Zest of 1 lemon
  • salt and freshly ground black pepper to taste
  • Fresh chives, chopped for garnish

Directions

  • Boil the potatoes in a large pot of salted water util tender, about 15 minutes
  • Drain and return the potatoes to the pot and mash until smooth
  • Add the WVOO Greek Lemon olive oil, warm milk, and lemon zest, and continue to mash, combining all the ingredients.
  • Season with salt and pepper to taste
  • Serve hot, garnished with chopped chives
