Ingredients
- 3 lbs Yukon Gold potatoes, peeled and quartered
- 1/4 cup WVOO Greek Lemon Olive Oil
- 1/3 cup warm milk
- Zest of 1 lemon
- salt and freshly ground black pepper to taste
- Fresh chives, chopped for garnish
Directions
- Boil the potatoes in a large pot of salted water util tender, about 15 minutes
- Drain and return the potatoes to the pot and mash until smooth
- Add the WVOO Greek Lemon olive oil, warm milk, and lemon zest, and continue to mash, combining all the ingredients.
- Season with salt and pepper to taste
- Serve hot, garnished with chopped chives
